You should write about how you are able to learn and handle stress if it's for an established company. This is because these type of companies needs employees to be resilient to stress.

Whether you target your job search towards an established Org or a startup may very much depend on where you are in "life". Either can be profitable but they may not both have the same level of "benefits". If you're married, then health insurance may not be to much of an issues but if you are single AND with children, the benefits may be much more crucial. There are certainly many other considerations on the table and no 2 people are exactly alike, but the benefits factor often directs the pursuit.
