i think the main Question that must be asked while defining an NLP challenge must be Do i have a sense of domain knowledge ? if not then i should ask for a subject matter and continiously learn and understand how they think when they get their data and how they manage to extract their useful information from their documents and what parts do they pay attention to , the sensitivity and secuirity and privacy.. by understanding this methodology you will be able to have a foundational direction towards your nlp approach

i think NLP engineers should spend a lot of time in R and D's because when you are building a solution suppose its a Document searching for example you may find a technique called RAG might be very useful , but the challenge could be the language of the document itself ,,, so the cost of the time here will be directed towards finding a suitable embedding model rather and the NLP engineer should research for similar tasks that had already been done in their challenge and focus more on finding an embedding model that's already trained on a similar task
