I like a clean and natural sound. Compressors are great if you know how to work them. Digital and VCA-style compressors tend to be clean and transparent. For an even and leveled-out podcast try a "rider" style plug-in. I go light on the EQ, usually low cutting around 75 to 80Hz at first and addressing issues as needed - stock plug-ins are adequate here. Noise suppression plug-ins can be invaluable when recording in less-than-ideal conditions, but they can also put cherry on top of an otherwise decent podcast. I like to use noise suppression plug-ins or a Primary Source Enhancer plug-in over a gate - gates seem either too light to cut out enough noise or so extreme that they sound unnatural.

Plug-ins are excellent toys I mean tools and it's really easy to get addicted to acquiring more and more, although I wouldn't know anything about that *cough-cough*. I would suggest starting with the 'native' ones, which are included with the editing software you've chosen.

This is a loaded question without a simple answer I feel. But I would just add that, most plugins have presets to make life easier. Presets are there to get you close, not necessarily to pick it and forget it. Tweak, listen, have fun (and learn while you do).

Some plug-ins/suites I like: iZotope RX, iZotope Nectar 3 or 4 (the ALM module is like a leveling/riding-style plug-in), iZotope Ozone, Waves Vocal Rider, Waves Playlist Rider, Waves PSE, and TDR Kotelnikov (the free version works great and is super clean.)

There are no set rules, only guidelines for using plug-ins for podcasting. I have changed what I use and how I use plug-ins over the past 6 years. I came from a music background and realized that what works for vocals doesn't always work for dialogue. It's about experimenting and finding what works for you, but at the same time, being able to scrap your current workflow for something even better.
