Once you're established as a writer in a genre, you can then further scale into different verticals with time. That also gives you an even and steady growth. The first niche that you pick should be in line with your interests/skills so the work doesn't burden you. For example, if you're a chef that also wants to write as a freelancer, you should pick cooking as a primary topic and then you can further scale once you're established and have a decent amount of clients.

I think the first and the foremost important factor that comes into play is Consistency. I've seen countless people trying to get into this field and then leaving soon after. The only reason behind is that they lack consistency. Freelance writing is the field in which you are in a continuous phase of evolution. Each passing minute is teaching you a brand new lesson.
