In my experience of working with school students, real projects have worked exceptionally well when teaching complex AI concepts to 10-12-year-olds. One way to teach Canny Edge detection is to take up the theory and try to explain thresholding using boring graphs and Python functions. Another better approach is to give the students a project to create Art using AI. Students use their colour images and learn to write Python code to trace the objects in the image. The iterative coding process and encouragement from the teacher have resulted in students learning complex concepts with ease.
