From my experience focusing on the middle of the P&L will choke your business. Focus on top line sales. Yes, reviewing the P&L after inventory will let you know where efforts need to be focused for training, evaluation, and follow up for sure. However when you focus on the guest experience and get on the damn floor and out of the office you will grow sales. Work hip to hip with the host stand, bartenders, servers, takeout and you will start to see what the guest see's every time they come to your establishment. Table visits can be game changers. Extending empathy to your team, grace to your guests, and looking at the long term will have a much bigger impact than choking the middle of the P&L. It is a report card. Review it and attack

Listen to your people, both customers and the crew. People know what they want and how to get it. Respect that and provide it at a value they are expecting. This creates a rolling action where growth is only natural. There is no better marketing than the one your consumers do, so use the data on hand to cater to majority of your populace. Keeping menu fresh is an important thing but it is also good to remember that few things work only when they are simple, so overcomplicating your menu is never a good idea. And, listen to your crew who supports the business. They know your consumer base inside out as they are the ones who are constantly in contact with them. Limiting the creativity of your staff is never a feasible solution.

Quality of the food , quality of the service both are main billers for earning more guest after controlling the cost will help to achieve better profitability

Keeping an organized walk-in and food storage area(s) is always a big plus. When things are organized, it's much easier to order efficiently and not over-order/over spend from day to day and week to week. Also, it helps to not over-prep, preventing food from getting wasted.

All these are great examples. Portion control, yield logs(for portioning proteins), budget logs, and the like keep the COGs consistent: if it’s slow, don’t bring in or prep as much. Revenue saves all, but on days when it’s not there, best to leave money in the pot/on the shelf. I also found that having an organized prep list for each station to account for what’s on hand keeps the cooks on top of pars. Especially when business fluctuates:

It takes ONE person to have ONE negative experience, for word to travel to SEVERAL times as many people. Before online reviews, and table top surveys, businesses relied on word of mouth. People tend to be far more impacted by a negative experience than a positive one. Mainly because, they were coming in, expecting a positive one. The guest is ALWAYS the number one person in the company.

It depends how “bad” is performing now. It may requires a total redoing of menu/other or if costs of profitability are in line, maybe simply needs focus on advertising/customer experience/foh manager with personality (in the end it could provide an extra reason why customers are coming back)
