I believe that there is an overlooked aspect to plate presentation. Aroma is as important and in some ways more important. Be it smoke wood, hay or herbs like sage. Then there are oil like basil and citrus. All of these use as a last moment addition work as an other garnishing dimension

Les herbes ont un r?le essentiel dans le dressage d'un plat ils viennent relever par leur go?t le plat en lui-même mais aussi lui donner quelques touches de couleur selon les herbes choisis ou les fleurs ou micro pousses. Les mélanges d'épices élaborés tels que le gomashio viennent aussi relever un plat soit par des notes d'acidité ou de piment ou de sel voire par des notes chocolatées ou sucrée. Les graines aussi peuvent contribuer au dressage du plat tel que les graines de courge de lin graines de pavot ou encore sésame
