In my opinion, the issue of distribution is not a major challenge, as a biotechnological plant does not depend on the weather, large agricultural areas, or the type of soil. This means that cellular solutions (cultivated) or bacterial or yeast fermentations cope better with distribution in contrast to growing food in a traditional way or production of plant-based alternative food.

You can change the batch size, equipment, ingredient ratios, etc. but you will need a measurable standard to achieve a satisfactory outcome. This sounds simple, but experimentation and patience will be needed.

In my experiences with scaling up from benchtop, the anticipated difference in handling of material from lab to production has to be mimicked with the best use of available benchtop processing, even then the attitude of acceptability circles vs bullseye.

My experience in scaling from a kitchen to a factory scale is that it also requires many trials. It requires looking at handling new raw materials coming to the site, storing and ordering challenges like MOQ. When trialling a new product we collect data to ensure a smooth transition to factory operations and ensure we cover any obvious issues that may arise and provide process instructions to achieve quality, food safety and assembly speed when producing. Sometimes a very simple product appears to be simple to make in a factory environment, but we also need to look at waste, some equipment requires to load enough of raw material to operate, but once orders are low - it becomes inefficient

Bringing the factory teams along the journey with you! In my experience, unless you include them along the entire journey during the concept stage all the way through to factory trials, getting them excited by it can be very difficult as they just see the head ache ahead of them.
