Most of modern languages can be best fit for these purpose. There will always be a constrain between security, performance and cost. You can choose any two at a time. More security will reduce the performance etc.

For example, if you are working in BFSI, you should consider choosing languages like C# where Microsoft's trust is present. Since it was not open-sourced, we can be assured that there will not be any vulnerabilities. There can be many other factors like scalability and resource availibility which can impact your decisions.

It can also indicate the language's longevity and relevance in the coming years. A language's ecosystem can make it much quicker to get something developed and running in production. Overall I think the two biggest factors are what the team is comfortable with developing in, and what the client is willing to support long-term. Making concessions on either could cause the lifetime price of the project to skyrocket.
