It's funny you should ask that. During an interview, I was asked to create a meal based on my favorite cuisine. I chose a Mediterranean lunch with a tossed Nicoise salad and chopped romaine, bruschetta with tapenade, and sundried tomatoes, for dessert there was mini tiramisus. When asked what I would serve to drink, I chose Prosecco. I don't know if the person was impressed or not. I didn't get the job. Perhaps the menu wasn't up to the current trends or didn't use any fancy techniques. I was true to myself and what I like. I suppose knowing yourself and your abilities and trusting your instincts is as important as what's trending and what new techniques are the flavor of the moment. I hope this helps.
