Start from the bottom. Work your way up. From check in, baggage handling, booking a flight, what happens on the ramp, duties of cabin crew, pilots duties except flying the aircraft, regulations, ICAO, IATA. ATC. These could give a good start.

Aviation does not limit people on gaining knowledge about how a segment is operated however, it is a highly regulated industry where certification issued and proof of knowledge gained is validated by the attendance. Perhaps, simulation Apps and other literature materials may serve as a guide for those who are passionate in pursuing a career in the industry. These are clearly outlined in the standard operating procedures as a requirement for a sustainable system. However, applications (Apps) and literature materials may only give you guidance to what the overall expectations may be. For instance, drills, practicals and line training are important elements of a well baked professional.
