I actually find that understanding what systems and business processes are currently in place and what the pain points are is the first step I then move on to user stories that follow a specific format such as who, what and why without regard to how. From the user stories I move on to the requirements. I find out what output they want because it directly relates to input and the relationship of the data. And most important I LISTEN very intently to what the client is saying and prompt them to discuss in more detail and when appropriate make suggestions.
