I'm an advcate for open source solutions and in the case of virtualization my go to is Proxmox VE. This solution has an active development team, a large community, and can run on a potato. It is based on Debian Linux with a modified Ubuntu LTS kernel so it is easy to use and configure via a terminal. Its web interface also make it simple for less technical folks. As long as you have the hardware for it, you can run an entire IT infrastructure on Proxmox, including other servers like Windows/Linux servers as well as work stations to SSH/RDP into. It is my go-to platform for running Docker containers on Ubuntu Server VMs, but can also run containers natively. It is great for testing, sandboxing, snapshotting, and a great backup solution.
