For example it could be a QR code leading to a survey with a discount or a gift-card for review.

The key is to treat them more like partners than instruments. Avoid purely transactional relationships with users. This is a lot easier when working with internal users (since you will likely work with them again in some capacity), but it's important in any context because users always have something to teach you as a UX professional.

I think the most important thing and the biggest challenge here are the questions you need to ask your customers. You can’t just ask: what you’ve liked or disliked about our product. The communication should be built strictly according to your product development plan. So you must to ask right questions. It's usually better to have this section towards the middle or the end of the interview so the user is aware of the context more and is comfortable to talk out loud creatively.

Say you are approached by the engineer that built that product and now wants feedback on their work. Are you going to feel comfortable being critical of the product? Consider providing the following disclaimer to the users you're working with. "We're looking for honest feedback feel free to share with us the good, the bad and even the ugly. No feedback will be taken personally or will hurt anyones feelings. We really appreciate your honesty throughout this process as it helps us improve"
