I doubt that any people need to manage versions for mock APIs but if this is a need, following the same versioning convention as the API that is being mocked makes the most sense.

Most people just use Major and Minor. Which is often enough for test APIs. Containerize them, put a version number, and backward compatibility is take care of. I'd say since your product/service will have a version, it's prudent to use the same version for your API definition, but to do that, it starts with documenting you API in a standard like OpenAPI. Once you have a document you can check it into your source control repository and tag with the same version number as your release number. This gives you a nice way of tracking everything and will have a single changelog maintenance and simpler tracking.
