In addition to what has been said, I would say that local and seasonal also supports cultural heritage breeds. Use your menu to highlight the sustainable dishes. You can place them top of the menu, you can use descriptive and indulgent language to describe plant based options (don't put them on a 'vegetarian menu', you can also share stories about the local farm/supplier. A QR code and/or visual image of the standards associated with the ingredients can serve to explain more about the sustainability credentials eg MSC or ASC seafood. Add carbon footprint labels if available to you, it's a great way to engage customers on the topic since it is a relatively new idea.
