The trap that many field service organizations and teams fall into is over-managing. Layers upon layers of processes and management are added in order to mitigate risks. There are many good techniques and strategies, but at the end of the day, the better an organization gets at empowering and educating the Field Engineers to take ownership of service, the more successful and scalable any strategies and techniques will be. The temptation must be resisted to give them ownership in word and job duty, but not empower them to actually own it. When each member of the team holds each other accountable and excels at communicating, consistency improves and risk is much more easily mitigated.
