In my experience, one the most important criteria for any promotion in the F&B operation is the quality of being a leader who understands the goals and objectives of the organization and is working hard to ensure that these goals and objectives are achieved. Skills can be developed or learned and experience comes with time but if a candidate doesn’t possess the right attitude it is worthless to entrust them with responsibility.

Once we define the criteria's for the growth in the hierarchy , employees get a direction and also are aware of the minimum skill sets required at the various levels, and hence they can get the desired positions by improving their skills and knowledge by getting different trainings and educational upgradations beneficial for the organizations as well as personal growth.

Ive been lucky to be in larger organizations during their growth phase. I can say that I successfully helped train 2 AGM to be GM’s both of which replaced me at respective locations, Sous Chefs to a Chef, and about 5 Supervisors into management. I’ve like to look at the bigger picture, for me to grow, I have to grow the next generation, so by taking the time to find which employee wanted to grow within the organization, I made it my mission to develop the skills they needed to be ready for the next step. The great part about that is when it’s time for you to be promoted, when you’ve built your team to take step up, the obvious replacements have already been trained to take the helm.

You need to explain to the selected candidate what you saw in them and what you want them to do based on their experience to help support the success of the organization. Basically what you saw in them! You then want to create a development plan for the unsuccessful internal candidates to be ready next time a similar opportunity arise so they can feel their journey did not just end and that there is still opportunity with you.

I agree, and my case would be a perfect example of the above, it is very important to communicate with your staff the reason for your decision and why you think the chosen candidate or candidates are the right people for the growth and development of the company without any bias. Congratulating the candidates is an important exercise that should not be overlooked as it is the right time to empower the candidates and to make known to them and other staff of their new responsibilities.

This may come as a surprise or a shock to few seeing their peers getting promoted and not them. Sit with them, discuss and share what went wrong and how can this be turned into a better performance which can then be considered for the next round of promotions. Motivate them as they are the ones who need more support and guidance at this point of time.
