Start by reading them - pick a field - dont be all over the place or you will get lost. AI is very generic so pick a battle and conquer it. You have to scan through 100's of them and then something amazing will start happening. You will start noticing patterns of the same code over and over and you will feel like you already read that particular article while in reality you did not.. Alongside, getting hands on with a few of them will really really help..

Having said that, coding itself is neither the primary purpose of practicing with projects nor a sustainable skill to hone - there is an increasing number of tools that helps you handle the nuances (i.e., Code Interpreter). Projects let you turn abstract problem solving into concrete milestones; these end-to-end experiences put you in the driver’s seat to devise the strategies and executions that deliver value, reinforcing learned concepts while opening new pathways for exploration.

After finishing your projects, don't leave them be. You can make best use of your projects when: 1- You keep the code clean, modular and documented. 2- Review the code if you haven't really done the previous step and make sure you get to a state that you can call it "clean", "modular" and "documented". 3- Since you have the modular version of the code for each project, you can make best use of this when another similar project is starting. Instead of starting each new project from scratch, you would now start from a working code with a lot of common elements and modules; Leaving only some modifications that are specific to the new project. Hope this can save you a lot of time and effort in your future projects!

To add to this, Kaggle to me is the best place to work on real world projects. You can join competitions which is a great way to asses your skillset with others. Even if you decide not to compete, you will still have access to project discussions, datasets,codes and best of all, you could come back at the end of the competition to look at the model or data analysis presented by competitors (some of which are solutions from professional machine learning engineers).
