Personally, I firmly believe it is much more important to share experiences than knowledge. I like to start a quick chat about how things have changed from the time I started using HTML to today. How I remember creating HTML layouts just using 'tables' without CSS or JS, and how I make HTML layouts right now following not only good semantic markup but also focusing on SEO and accessibility. I would recommend focusing your interview on professional experiences of real cases instead of trying to demonstrate only technical knowledge.

I think it's better to have a few high-quality, well-executed projects to display rather than a large number of mediocre ones. Choose a project where you had to structure the HTML a certain way in order to accomplish a task, and be able to speak to your organizational decisions, naming conventions, and structure in detail. Remember that giving context helps interviewers not only understand the situation but also your problem solving skills.

An good example are the challenges I create for myself. To see what it possible with HTML now and then I'm seeing how certain HTML tags can be used in different ways. Just so I understand how these tags work and the capabilities. Here I'm focussing on fun and not on production ready code, I see it more like puzzle or game. Previously I have used an HTML grid to make mouse tracking possible without tracking the mouse in Javascript. And I made a minesweeper with only using checkboxes. This challenges and puzzles made me look for to me new HTML tags and figure out how they worked. It sparked my creativity and passion.

The insights I always liked within frontend development is the playfield of tangible interfaces and a digital estimation of tangible interfaces. As humans we have always interacted with real world objects and later on dealt with physical input and output devices. Because of the dynamic possibilities of the web the physical way is not possible. So we had to learn new ways of interacting as humans. Where digitally changes can look instant. This difference and how to optimise this interaction is one of the most intriguing subjects around frontend development. HTML is the key factor because its the closer to a physical object then CSS (styling) and Javascript (logic). It would be the base where the others can be seen as a sauce to top it off.
