The key point to remember is there is no "Perfect" MES. Each MES platform has its strengths and weaknesses. So you need to understand what you want out of the MES. Do you want a shorter lead time to introduce new products in your production facility, sacrificing the design simplicity? Or do you want a simple MES that everyone can maintain, sacrificing the flexibility? If there's any MES vendor saying that they have the perfect product (robust, flexible, simple, easy to maintain, affordable, etc), run away.

In a fast paced manufacturing environment, i have yet to see a system where a digitized system will approximate that of a human in perceiving the manufacturing situation using five senses. The sense of sight, smell, taste, hearing and touch. If that is hurdle enough, imagine the challenge of connecting these sensory inputs into a sentient artificial intelligence that can make decisions and translate it into an automated prevention and correction action system.
