Science teaches us what's good and what's not so good. Given that, I think restaurant menus have to evolve at some pace, even if not rapidly. If you are a large chain, this could mean a large investment and a lengthier turnaround time but for mom and pop restaurants, this should be a bit more doable even though they are going to have their due share of challenges as well.
