How can you build a successful team in banquet operations?

Hi, I am Maricella and I worked in Banquets for the Lafayette Hotel for over 20 year. In my experience I will also add that once you have instilled your vision and expectations that you let your team members, also be able to express them selfs in their work and add to your vision. They will be more inclined to work for you with appreciate to see and learn your vision. They will feel like a part of our team.

Consistency cleanliness and uniformity will be the basis of your catering Department. You must be consistent in providing accurate information, types of table setups, silverware placement, type of napkin fold, who's working the event and having regular premium briefings and lineups. If you are consistent your staff will be consistent.

Bonjour à Toutes et à Tous, J'ai travaillé lors d'une soirée privée avec plus de 580 tables de 10 personnes, avec entrées, plats et desserts, les eaux et les vins étaient laissés au bon plaisir des clients. Une salle répartie en 2 offices, et 6 carrés de tables ~ 100 tables. Nous étions environ 80 Serveurs et presque autant en cuisine. Tout s'est très bien déroulé ! Car l'organisation et la charte graphique des rubans de couleur a été respectée !

In my experience teachers make a wonderful addition to your core team. They are available nights, weekends, holidays etc. They are disciplined, kind to your guest, problem solvers, can collaborate and build cohesiveness with and within your team.

Be aware of the current strengths and growth opportunities for your team. Knowing what your team needs to help succeed at the highest level helps to narrow down who you interview, hire, and onboard. For example, do you need someone data-driven, who can do the reports and help crunch the numbers? Do you need someone who is going to help expand the business It's that dynamic where often times places don't factor into their decision

Very well said. I would emphasize that hiring the right people means getting people with the right attitude. Sometimes experience plays a minor role in defining the right team. A person with the right attitude can be easily tailored towards the company's vision and led towards getting the right. Complimenting the attitude with skills and having the right tools, effectiveness and efficiency is easily achieved.

One thing that I found out full is to promote from within and train staff to be knowledgeable and expert in their service skills. Recognize leaders at lineups and point out good technique throughout the evening, as well as pointing out things that can be improved. Your staff needs to understand the attention to detail needed to provide excellent service in the dining room. The use of co-captain positions also lead positions helps to motivate and reward individuals that show promise.

Delegation and follow up is extremely important in the operation and also in the training and development of your team. Don't expect what you don't inspect. You should be walking through the dining room and critiquing as well as fixing any indiscrepancies that you see. You're leading by example.

A regular weekly banquet event order meeting to go over the week's events make plans, ensure that you have the proper equipment and Staffing and discuss problems or make improvements from the week before. This keeps everyone in the loop in regards to what's going on in the banquet Department. It's also a good time to communicate things that you want to work on ie pulling dessert silverware down, greeting guest, pulling the guest napkin Etc

I can't say enough about a positive attitude and leading by example. When your team sees you there early and helping with the setup of the event it inspires them. When you have a sample place setting and your banquet event orders with your notes, order of service, Staff names and assignments it helps them to know that you are right there with them and assisting them to be successful.
