I believe for documentaries, research will be continuous so there has to be a balance with research through pre, prod and post. For each interviewee you have you may need to conduct research on what they said. Interviewees can unlock other interesting information you may want to research and find info or other people to interview based on new information. I would have someone on staff specifically for research purposes when working on a documentary.

The biggest think you can do is anticipate, and then welcome, the unanticipated problems that will inevitably occur (especially in documentary filmmaking!)
