I love to use this demostration as a "magic" to explain the change in chemical properties of anthocyanins, the strong antioxidants in purple / blue plant foods. Our perspectives about same topic can be different for people from different backgrounds (technical or practical). Listening to audience points of view can help too much to get the future sessions improved better than the first one. You can never imagine what your audience are thinking or how they understand the topic or their concerns unless the communication is going in both directions. This also helps keeping the communication active with less boredom or lack of attention, the message becomes personalised for most attendees when their concerns and ideas are effectively considered.
