If you are passionate about game design, you will have a sketchbook that showcases the "fun scribbles" - your dream game level/characters/puzzle designs. And a good game designer is an avid gamer first! Those games you play regularly will modulate your game design anyway! Your work portfolio will speak for you! Include those best designs for which you got the most peer appreciation. Also showcase your best sketchbook pages, which reflect your future dreams!!

Try making a "learning" game - set yourself some mechanics/elements you want in your game and start doing it. Try some youtube tutorials, and most importantly - READ DOCS. Take as long as you need. After you're finished, ask yourself if this game is worth releasing. If it is, you can release it and see feedback from players. If it's not, continue developing, improving, iterating. If you don't feel like releasing the game at all, that okay too, but you can put it in your portfolio. Personally, I think best place to start are mobile games.
