I can share from experience that observation wins everytime when it comes to usability test. When you are silently observing, you spot things (take note of actions) you would have easily missed if you were actively speaking and asking questions. You also want to be careful that you are asking leading questions.

I would prefer to say record your usability tests sessions as opposed to just taking notes because, there is a possibility that you miss certain important information when you are taking notes. While it is advisable to record, if a recording wouldn't be possible then by all means, take notes
