It is a very good idea to have colour corded system in place but also it’s always safe to have particular kind of products in one place and could be in the fridge freezer or dry storage where as it could be shellfish dairy nuts, or any other allergens together so that it’s easy to find and easy to avoid cross contamination.

Hold brief daily meetings to discuss special dietary requirements on the menu and address any previous issues with regards to any dietary issues . Create a centralized, easily accessible reference guide for common allergens and dietary restrictions Provide regular training sessions on handling dietary requests. Have a separate section catering for dietary requests in the kitchen . Clearly mark all dockets with dietary preferences on the station pass . Hold the person running the pass for any issues or mix ups .
