In my opinion, the focus should be on addressing the root problem, not just the consequences. Why has the waiting time increased? Do you lack BOH/FOH staff? Is your menu too large? Identify the cause and work on it – hire more helpers for those busy hours (students would appreciate the opportunity to earn some extra money). Or reduce the menu and offer set meals at a lower price. Kitchen staff can prepare 10 identical dishes much faster than 10 different ones. As for effective ways to ensure customer satisfaction – the manager should personally apologize for the delay and offer a discount on the entire order or a complimentary dessert/drink.
